Pumpkin Parfait


Ingredients


1 cup canned pumpkin


1 jar marshmallow creme


1 package cream cheese


cup maple syrup


2 tablespoon orange juice concentrate


Ѕ teaspoon ground nutmeg


cup crumbled gingersnap cookies


1 Ѕ teaspoons ground cinnamon


cup chopped toasted pecans


Method


With the help of an electric mixer, mix together the cream cheese, marshmallow creme and orange juice concentrate until you get a smooth white colored mixture with a creamy consistency.


In a medium sized bowl, combine the pumpkin along with maple syrup, ground nutmeg and cinnamon powder. Now add around ј cup of the cream cheese and marshmallow mixture into the pumpkin mixture. Add one heaped tablespoon of cream cheese and marshmallow mixture into a dessert glass and top it with a tablespoon of the pumpkin mixture. Repeat the layers three times, ending with a spoonful of pumpkin mixture. Place the dessert glasses in the refrigerator to set for at least three hours. Before serving, add a sprinkling of chopped pecans and crumbled gingersnap cookies. This is one of the best Thanksgiving desserts for kids as it looks visually appealing.


Pecan Cheesecake Pie


Ingredients


1 packaged refrigerated pie crusts


4 large eggs, divided


cup brown sugar


1 cup light corn syrup


1 packet cream cheese, softened


1 ј cups chopped pecans


teaspoon salt


2 teaspoons vanilla extract


Method


In a pie plate, place the packaged pie crust and fold the edges into the plate. With the help of an electric mixer, mix the cream cheese along with 1 egg, Ѕ cup sugar, salt and 1 tablespoon vanilla extract at medium speed. When you get a smooth and lump free mixture, pour this cream cheese mixture into the pie crust. Now sprinkle the cream cheese with a layer of chopped pecans.


Again whisk together the corn syrup with the 3 remaining eggs, 1 tablespoon vanilla extract and ј cup sugar. Pour this mixture over the chopped pecans and bake the pie at 350° C in an oven for about an hour. Transfer to a wire rack and cool the pecan cheesecake pie before serving with a dollop of fresh cream. This is one of the best thanksgiving desserts that is also easy to make.


Spicy Cranberry Granita


Ingredients


2 cups cranberry juice


Ѕ cup demerara sugar


1 jalapeno pepper, sliced


4 mint sprigs


Ѕ inch ginger, grated


2 tablespoon freshly squeezed lime juice


Method


In a small saucepan, heat the cranberry juice along with sugar, grated ginger, mint sprigs and jalapeno pepper. Cover the saucepan and let this mixture simmer over low heat for 10 minutes. Remove the mixture from heat and let it cool to room temperature. Pass the mixture through a sieve and discard all solids. Add the lime juice and pour the cranberry mixture in a shallow dish and freeze for about an hour. Remove mixture from the freezer and rake it with a fork. Freeze for another 2-3 hours until the mixture sets. Rake mixture with a fork and serve on individual dessert glasses or bowls with a sprig of mint on top. This is a low calorie and light dessert ideas for Thanksgiving.
